Egg Tacos
So, I’m sharing some eggs and vegetables-packed comfort food recipes to help carry us through to springtime.

Egg Tacos are one of the easiest and fastest dishes made with eggs. We’ll be using the ISE eggs which are known for their best quality. ISE Eggs are so rich in their nourishment value that we would recommend that every individual should switch to ISE Eggs.
Ingredients
- 6 Large ISE eggs (this is optional, you can take as many as you want according to the quantity of people)
- Salt ¼ tablespoon
- Unsalted butter 2 tablespoon
- Pepper ¼ teaspoon
- Small corn tortillas, 8
- Cooked meat, like chicken or any other preferable meat that you like, 1 cup
- Cooked vegetables, such as corn, onion, tomatoes, potatoes or any other leftover or preferred vegetables
- Hot sauce and fresh cilantro, for serving
Getting It Done
- Whisk the eggs until they are fully combined or mixed.
- Now, take a medium saucepan and melt the butter over medium heat. Once the butter is melted, reduce the heat to medium low and pour the eggs in the saucepan. Mix them well, until the eggs have reached the desired level of softness.
- Remove from the heat and stir some salt and pepper, then move to a big serving platter.
- Now, warm the vegetables in a microwave or in a skillet over low heat. Transfer the warmed vegetables to the serving platter with the eggs.
- Warm the tortillas on a gas stove in a medium heat, make sure to toast the tortillas to both sides of it. After this, wrap these warm tortillas in a clean dish towel to keep them warm.
- Now, fill the tortillas with those scrambled eggs, vegetables, and cooked chicken (you can use any other meat, as per your choice) and for the toppings, put some cilantro and hot sauce (you can use as per your choice).
