This recipe is the ultimate way to kickstart your day. It is great to whip up for breakfast during the week!
1. Whisk egg, spinach, salt and pepper all together in a small bowl.
2. Take one small, non-stick skillet and add little olive oil. Set it over medium heat.
3. Once it is warm, add the egg mixture and keep stirring it, make sure the eggs are fully cooked and are soft and the spinach is wilted. Then, remove them from heat and stir them in salsa.
4. Spread cheese evenly on the tortilla, make sure to leave a few inches around the outside of the tortilla.
5. For 30 seconds, microwave the tortilla until you see the cheese melting.
6. Now, place the eggs along in the middle of the tortilla.
7. Finally, fold up the bottom of the tortilla, fold in the sides then and then tightly roll it up from the bottom.
8. Your Egg burrito is ready to eat.
