Authentic Greek Omelette
with Ise Egg

So, I’m sharing some eggs and vegetables-packed comfort food recipes to help carry us through to springtime.

A big omelet stuffed full of traditional Greek flavors: feta cheese, spinach, and olives.

Ingredients

Getting It Done

  • Take one medium bowl, whisk eggs, water, and pepper. Set them aside.
  • Take one non-stick frying pan and spray some cooking spray, heat the pan over medium heat. Add onions and stir them frequently for about 1 minute, then add tomato and stir them for 1 minute again.
  • Now, add olives, feta cheese, and oregano and stir them all for a few minutes. Set aside.
  • Take another non-stick frying pan and spray some cooking spray on it, heat them over medium heat. Pour one-quarter of an egg mixture into a frying pan. As the egg settles down around the edge of the pan, gently push the cooked portions towards the center using a spatula. Tilt your pan a bit and move the pan to allow the uncooked ise eggs to flow into empty spaces.
  • When eggs are nearly set on the surface but still seem moist, cover half of the omelette with one-fourth of the filling. Now, fold the unfilled half of an omelette over the filled half. Let them cook for a minute.
  • Your Authentic Greek Omelette is ready! You can make as many as you want, just by repeating the whole process.
